It has been used for decades in traditional Greek cuisine , mainly in tripe soups , stews and restorative dishes .

🔥 How to cook it

  • Patsa Soup: Boil on low heat for 3-4 hours , with garlic, vinegar and lemon or tomato sauce.

  • Cooked: Combine with chickpeas or beans for a rich, nutritious soup.

  • Slow cook: In the oven or casserole for 4 hours at 160°C with herbs and sauce.
