🔪 A few words about cutting

The tenderloin is located on the inside of the calf's back , protected from stress, which gives it unique tenderness .
It is a very clean cut , almost free of fiber or fat, with a delicate, fine flavor , ideal for quick cooking at high temperature.


🍳 How to cook it

  • Grill / Pan: Cook for 2-3 minutes per side for medium rare.

  • Frying pan: Sauté with butter and deglaze with wine or brandy for sauce.

  • Oven: Bake at 180°C for 20-25 minutes for a whole fillet.
    💡 Let it rest for 5 minutes before cutting it, to retain its juices.
