It is a lean, compact and firm cut, with a straight texture that makes it ideal for slow cooking , rolls and oven dishes , where the pure flavor of the meat is highlighted without unnecessary fats.
Its natural structure helps it remain soft after cooking at low temperature.
🔥 How to cook it
