🔪 A few words about cutting
Ossobuco (ossobuco = “bone with a hole” in Italian) comes from the lower part of the calf's thigh , near the shin.
It is cut with the bone and includes the marrow , which melts during cooking and offers rich flavor, creamy texture and aromas .
This is a piece that loves slow cooking , as it gradually softens and becomes a delight , ideal for dishes such as osmobuko with wine , braised meat or baked vegetables .
🔥 How to cook it

Casserole: Sauté lightly, deglaze with wine and cook with tomato or lemon for 1.5 – 2 hours over low heat.

Oven: Bake at 180°C for 2 – 2.5 hours with potatoes or rice.
