It is a cut with plenty of intramuscular fat and a thin bone , which melts when cooked and offers a full flavor , rich aroma and crispy texture .

🔥 How to cook it

Grill/BBQ: Cook for 5-6 minutes per side over medium heat, until crispy.

Oven: Bake at 200°C for 35-40 minutes with potatoes, lemon and oregano.
