The shank is the lower part of the calf's leg (shin), known for its tight muscle texture and high collagen content .
During cooking, collagen turns into a natural jelly , giving rich body and a silky texture to food.
This cut is ideal for slow-cooked dishes , soups , tripe and oven-cooked dishes .


🔥 How to cook it

  • Soup / Tripe: Boil on low heat for 3-4 hours , with vegetables and spices.

  • Casserole: Cook with red sauce or lemon for 2 hours , until tender.

  • Oven / Casserole: Bake at 180°C for 2.5 hours with potatoes and herbs.
