Spalomita , also known as Vasilopoula , is one of the most delicious and juicy cuts of veal.
It comes from the front part of the animal , near the shoulder, and stands out for its natural deliciousness , the collagen it contains, and the soft texture it acquires with proper slow cooking.
It is ideal for braised meat , lemon sauce , wine sauce , baked with potatoes or stew , as it wonderfully absorbs the aromas of the ingredients.

🔪 A few words about cutting

The sirloin is located in the front of the calf, above the shoulder and below the rib .
It contains fine fibers , collagen and a small amount of fat , which when cooked transform into a rich, soft texture .
It is a traditional cut for slow-cooked dishes with a deep flavor and aroma.


🍳 How to cook it

  • Casserole: Simmer for 2-2.5 hours with tomato sauce, wine or lemon.

  • Oven / Casserole: Bake at 180°C for 2.5-3 hours with potatoes or vegetables.

  • Slow cooker: Cook for 6 hours for a Turkish delight effect.
