It comes from the back of the calf and combines two exquisite cuts:
the tenderloin on one side and the striploin on the other, separated by the characteristic “T” shaped bone.

The result is a steak with rich flavor , perfect texture , and juicy cooking — ideal for grilling , cast iron , or BBQ .

🔥 How to cook it

  • Grill / BBQ: Grill over high heat for 3-4 minutes per side for medium rare.
    Reduce the temperature slightly and continue for another 2-3 minutes for more well-done.

  • Mademi: Bake at a high temperature, add a little butter and thyme at the end for extra flavor.

  • Oven (optional): After sautéing, bake at 180°C for 8-10 minutes .

💡 Let the steak rest for 5 minutes before serving to "lock in" the juices.
