🔪 A few words about cutting

The trans (or “topside”) is a cut from the back of the thigh , next to the panties.
It has fine fibers , a stable shape and a low fat content , making it ideal for rolls , lemonade or red meat .
By slow cooking it becomes very soft and retains the meat's juices .


🍳 How to cook it

  • Oven: Bake at 180°C for 2 hours with potatoes or vegetables.

  • Casserole: Cook over low heat for 1.5-2 hours with tomato or lemon sauce.

  • Roll: Fill with cheese, peppers, carrots, and bake in a casserole dish for 2 hours .
