🔪 A few words about cutting
The trans (or “topside”) is a cut from the back of the thigh , next to the panties.
It has fine fibers , a stable shape and a low fat content , making it ideal for rolls , lemonade or red meat .
By slow cooking it becomes very soft and retains the meat's juices .
