Transveal from Greece Inner part of the thigh, boneless, poor in connective tissue. It's the classic schnitzel cut, it doesn't have a lot of fat and it's kind of a dry meat. It turns out escalopes, thin slices that are usually made in the pan, but also schnitzel, while it is also made in the pot.
